bruschetta with tomatoes

Great starter and very simple to do and can pack loads of flavour. Can be prepared in advance.

  • prepTime: 15 minutes
  • Cook time: 2 minutes
  • Total time: 17 minutes
  • 4 medium Tomatoes (disgard middles )
  • 1 bulb Garlic (chopped or crushed as much or as little as you want)
  • 4 tablespoons balsamic vinegar (enough to soak the Tomatoes once chopped)
  • 4 pieces crusty bread (home made ciabater is nice!)
Preparation method
Step 1 chop and quarter tomatoes – disgard middles ( use in Chilli or spag bol) chop the skins up to as small or large as you prefer.
Step 2 add garlic and balsamic vinegar to tomatoes and place in fridge to cool. Good Idea to cover with cling film.
Step 3 Serve tomatoes on toasted crusty bread.
Step 4 Try something different

Balsamic vinegar – if you look around you can find interesting vinegars. This is where you can experiment – try strawberry or raspberry balsamic vinegar.
