Rogan josh curry & paste

Typically made with lamb but you can substute with chicken or beef. You can make this as a paste to use later or use straight away as a great curry.

Rogan stands for “red colour”, josh stands for passion or heat.

Ingredients
For the paste

  • 2 cloves garlic
  • Thumb sized root ginger
  • 75g roasted peppers (from jar)
  • 1 tbsp paprika
  • 2 tsp garam masala
  • 1tsp turmeric
  • 1/2 tsp sea salt
  • 2 tbsp groundnut oil
  • 2 tbsp tomato puree
  • 1 fresh red chilli
  • Small bunch fresh coriander

Spices for toasting

  • 2  tsp cumin seeds
  • 2 tsp coriander seeds
  • 1 tsp black pepper corns

Ingredients for curry

  • Meat such as chicken, beef or lamb
  • 1 medium onions chopped finely
  • 1 fresh  red chilli finely chopped
  • Thumb sized root ginger peel and grate
  • Small bunch fresh coriander chopped
  • Groundnut or vegetable oil
  • 2 bay leaves twisted
  • 1 tin chopped tomatoes
  • Rogan josh paste as above
Preparation method
Step 1 For the paste, toast the “spices to be toasted” add to pestle and motar and grind until fine. Peeled the garlic and ginger and add to a food processor along with the toasted ground spices and all the other paste ingredients. Whiz until you have a smooth paste. You can jar the paste and keep in the fridge for a week if you are not using straight away
Step 2 To make the curry, (using the curry ingredients) In a large pan add oil,add onions, chilli, ginger, coriander & bay leaves and cook for around 10 minutes. Add meat and brown.add tomatoes and rogan josh paste. Add water if need to losen up curry. Bring to the boil then turn heat down to a simmer and cover for an hour. Keep checking to make sure curry does not dry out and stick and water in necessary.
