Preparation method |
Step 1 | Line a 2lb loaf tin with grease proof paper | |
Step 2 | Add butter and sugar to a food blender and blend until you get a fluffy mixture | |
Step 3 | Add eggs, flour, baking powder and lemon zest and continue to blend until smooth. | |
Step 4 | Pour you mixture in to you lined tin and place in the oven for 30-35 minutes | |
Step 5 | Once ready, turned golden and edges coming away from side of tin, turn out on a wire rack a let cool | |
Step 6 | Whilst cooling prepare your icing by mixing lemon juice with the icing sugar. | |
Step 7 | Drizzle the icing over the cake and once set and cooled completely serve and enjoy | |
Step 8 | This will get for a week if wrapped in cling film |
