Ideal for high tea, picnics and just cause you love cakes!

Very simple to make.

  • Total time: 40 minutes
  • 175g Block of butter
  • 175g Sugar
  • 175g Self raising flour
  • 3 eggs
  • 1 tsp baking powder
  • Zest of 2 lemons
  • For the icing
  • 100g Icing sugar
  • Juice of 1/2 lemon
Preparation method
Step 1 Line a 2lb loaf tin with grease proof paper
Step 2 Add butter and sugar to a food blender and blend until you get a fluffy mixture
Step 3 Add eggs, flour, baking powder and lemon zest and continue to blend until smooth.
Step 4 Pour you mixture in to you lined tin and place in the oven for 30-35 minutes
Step 5 Once ready, turned golden and edges coming away from side of tin, turn out on a wire rack a let cool

Step 6 Whilst cooling prepare your icing by mixing lemon juice with the icing sugar.
Step 7 Drizzle the icing over the cake and once set and cooled completely serve and enjoy

Step 8 This will get for a week if wrapped in cling film

Guaranteed to rise Yorkshire Puddings

Ever dreamed of big Yorkshire puddings but yours always look deflated well try this recipe. This has not failed me yet! (you can change the quantity by reducing by half or quarter)

  • Serves: 16 puddings
  • prepTime: 10 minutes
  • Cook time: 30 minutes
  • Total time: 40 minutes
  • 1 Pint of milk
  • 250g flour
  • 8 eggs
  • Salt
  • Pepper
  • Oil such as rapeseed oil
Preparation method
Step 1 Blend flour and eggs in to a paste.
Step 2 Add milk place in the fridge and leave as long as possible, preferably over night.
Step 3 When ready to cook place oil in bottom of each case filling the bottom completely. Place in a pre-heated oven (200C).
Step 4 When oil is hot, remove tray and fill each case to the top with the batter mix. You need to do this as quick as possible and get the tray back in to the oven.
Step 5 Here’s the trick DON’T OPEN THE OVEN ONCE COOKING! leave in the oven for 30 minutes and remove from oven and serve.

Deep Fried Brie

This is a real treat dish, and one of my fav’s and this is very easy to prepare.
Best served with baby leaves salad and chilli jam!

  • Serves: 2-3
  • prepTime: 30 minutes
  • Cook time: 10 minutes
  • Total time:40 minutes
  • 2 Eggs (you may need extra)
  • Plain Flour (side dish)
  • Breadcrumbs (best if you make your own but store brought crumbs will do)
  • Salt & pepper
  • Sun flour oil (enough to deep fry your Brie chunks)
  • 1 wedge Brie (cut in to chunks)
Preparation method
Step 1 To start off place around two table spoons of flour on to a side dish Flour

Step 3 Crack the eggs in to a bowl and beat together add some pepper 20130322-134134.jpg
Step 4 Cut the Brie in to bit size chunks. 20130322-134032.jpg
Step 5 Now to egg and bread you Brie.
Here’s the trick to egging and breading!Take a chunk of Brie with your left hand and roll in the flour.
Step 6 With your left hand place the floured Brie chunk and place in the beaten egg and roll around so that it is completely cover in the egg. 20130322-134335.jpg
Step 7 Still with your left hand place in the bread crumbs. Now using your right hand roll the Brie around in the breadcrumbs until completely coated still using your right hand transfer to a plate. Complete this for all Brie chunks.. 20130322-134358.jpg
Step 8 Right now to double dip! Complete the process again for all the chunks but leaving out the flour dip. Trust me the double dip makes this!
Step 9 Once finished place the place of Brie into the fridge until ready to cook.
Step 10 To cook deep fired brie. heat the oil in sauce pan, when oil is hot add breaded brie two or tree chunks at a time and leave in oil until golden brown (45seconds – 2 minutes) remove from sauce pan and drain on kitchen paper and serve hot.

Simple Chocolate Muffins – that you can make with the Kids

Nice and easy muffins that you can make with the kids on a wet day!

  • Cook time: 20 minutes
  • Total time: 30 minutes
  • 125g Plain flour (For mixing bowl)
  • 25g Coco powder (For mixing bowl)
  • 1 teaspoon Baking Powder (For mixing bowl)
  • 1 Egg (For jug)
  • 60g Sugar (For jug)
  • 2 tablespoons Oil (For jug)
  • 100ml Milk (For jug)
  • 500g Icing sugar (For Icing)
  • 0.5 – 1 tablespoon warm water (For Icing)
Preparation method
Step 1 Pre heat oven to 160
Step 2 Mix all the ingredients in to a bowl that are described as “For mixing bowl” and mix together.
Step 3 Mix all the ingredients in to a jug that are described as “For Jug” and mix together.
Step 4 Now pour the jug ingredients in to the bowl of ingredients and mix. (add chocolate chips if you wish.)
Step 5 Spoon mixture in to bun cases and place in the oven for 20 minutes at 160 degrees. When the cracks appear on the top and you can put a cocktail stick in to the muffin and the stick is clear the muffins are done. Ta-dah!
