Rogan josh curry & paste

Typically made with lamb but you can substute with chicken or beef. You can make this as a paste to use later or use straight away as a great curry.

Rogan stands for “red colour”, josh stands for passion or heat.

For the paste

  • 2 cloves garlic
  • Thumb sized root ginger
  • 75g roasted peppers (from jar)
  • 1 tbsp paprika
  • 2 tsp garam masala
  • 1tsp turmeric
  • 1/2 tsp sea salt
  • 2 tbsp groundnut oil
  • 2 tbsp tomato puree
  • 1 fresh red chilli
  • Small bunch fresh coriander

Spices for toasting

  • 2  tsp cumin seeds
  • 2 tsp coriander seeds
  • 1 tsp black pepper corns

Ingredients for curry

  • Meat such as chicken, beef or lamb
  • 1 medium onions chopped finely
  • 1 fresh  red chilli finely chopped
  • Thumb sized root ginger peel and grate
  • Small bunch fresh coriander chopped
  • Groundnut or vegetable oil
  • 2 bay leaves twisted
  • 1 tin chopped tomatoes
  • Rogan josh paste as above
Preparation method
Step 1 For the paste, toast the “spices to be toasted” add to pestle and motar and grind until fine. Peeled the garlic and ginger and add to a food processor along with the toasted ground spices and all the other paste ingredients. Whiz until you have a smooth paste. You can jar the paste and keep in the fridge for a week if you are not using straight away
Step 2 To make the curry, (using the curry ingredients) In a large pan add oil,add onions, chilli, ginger, coriander & bay leaves and cook for around 10 minutes. Add meat and brown.add tomatoes and rogan josh paste. Add water if need to losen up curry. Bring to the boil then turn heat down to a simmer and cover for an hour. Keep checking to make sure curry does not dry out and stick and water in necessary.

Home Made Pot Noodles

This is a simple take on the store bought pot noodle but with fresh ingredients that make it taste nicer!

To start with you will need to get hold of the fine type noodles that you pick up in the supper market.

I have listed several combinations that can be tried but feel free to change and mix around. All you will need to do is combine the “POT” (old fresh soup container) and the “JAR” (baby food jar or simular) and add boiling water from the kettle when you are ready to eat.

Spanish style
Ingredients for the pot (option 1)
  • Fine dehydrated noodles
  • Finely sliced carrots
  • One Finely sliced spring onion
  • Frozen peas and sweetcorn
  • Chopped Choretito
Sweet and sour
Ingredients for the pot (option 2)
  • Fine dehydrated noodles
  • One Finely sliced spring onion
  • 1tsp powdered ginger
  • Sugar snap peas 2 or 3
  • 1 chopped red chilli
Ingredients for the Jar (option a)
  • 2 tbsp dark soya sauce
  • 1 tbsp light soya sauce
  • 3 tbsp pasata
  • 1 tbsp chilliman pasta
  • Pinch of chilli flakes (to taste)
  • Salt and pepper.
Ingredients for the Jar (option b)
  • 2 tbsp dark soya sauce
  • 1 tbsp light soya sauce
  • Lime
  • 1 tsp Brown sugar
  • Salt and pepper.
Ingredients for the Jar (option c) Devils sauce
  • 1 tbsp English mustard
  • Dash wostersauce
  • 1 tbsp spicy ketchup
  • Splash of tabasco sauce
  • 1 tbsp cider vinegar
  • Red current jelly
  • Tinned crab
Preparation method
Step 1 For the pot, finly chop the carrott and spring oinion. Remember the ver is to be wafer thin as the only cooking it will get is from the boiling kettle water that you add to the pot
Step 2 Crush up the noodles and squash them in to your pot. Add the carrots, spring onion, peas and sweetcorn and chotetito.  Thats the pot done. Put on the lid until you are ready to eat.
Step 3 For the jar, add all the ingredients to your small jar. Cloase the jar and shake.  You can leave this until you are ready to serve.
Step 4 To serve, boil kettle. Add contents of the jar to you pot. Poor the boiling water into the pot just to cover the pot contents.  Replace the pot lid and leave for 5-8 minutes. Open stir and enjoy! Better then any store brought pot snack!
