Ideal for high tea, picnics and just cause you love cakes!
Very simple to make.
|Step 1||Line a 2lb loaf tin with grease proof paper|
|Step 2||Add butter and sugar to a food blender and blend until you get a fluffy mixture|
|Step 3||Add eggs, flour, baking powder and lemon zest and continue to blend until smooth.|
|Step 4||Pour you mixture in to you lined tin and place in the oven for 30-35 minutes|
|Step 5||Once ready, turned golden and edges coming away from side of tin, turn out on a wire rack a let cool|
|Step 6||Whilst cooling prepare your icing by mixing lemon juice with the icing sugar.|
|Step 7||Drizzle the icing over the cake and once set and cooled completely serve and enjoy|
|Step 8||This will get for a week if wrapped in cling film|
